Balsamic Roasted Brussel Sprouts

  • 800 grams brussel sprouts 
  • ½ teaspoon salt 
  • ½ teaspoon pepper 
  • ½ cup olive oil 
  • ¼ cup balsamic vinegar 
  • Ricotta Cheese 
  • Zest and juice of 1 lemon
  • ¼ teaspoon salt  
  • Pomegranate seeds 

Instructions: 

Preheat the oven to 375 degrees, convection. Cut the brussel sprouts in half and mix with olive oil, balsamic vinegar, salt, and pepper. Spread on a baking tray and bake for 20-25 minutes or until crispy and cooked through. Mix the ricotta with lemon and salt then spread on a serving dish. Top with the brussel sprouts, an extra squeeze of lemon and balsamic, and salt if needed. Sprinkle on pomegranate seeds and serve!
