Chewy Ginger Molasses Granola

Groceries:
- 4 cups rolled oats
- ½ cup sliced almonds
- ½ cup pecans, chopped
- ½ cup walnuts, chopped
- ¼ cup hemp seeds
- 2 Tbsp Molasses
- ¾ cup honey
- ½ cup olive oil
- 1 tsp salt
- 1 tsp vanilla
- 2 tsp ground cinnamon
- ½ tsp ground clove
- 1 Tbsp fresh ginger or 1 ½ tsp ground ginger
Instructions:
Preheat your oven to 325 degrees. In a medium bowl, add the oil, honey, molasses, vanilla, salt, and spices. Mix until combined.
In a large bowl, add the oats, nuts, and seeds. Pour over honey oil mixture and evenly distribute the wet with the dry. Pour the uncooked granola onto a parchment lined baking sheet and bake for 25-30 minutes until lightly toasty.
The key is to let the granola completely cool on the pan so the sugars aren’t hot. This will give you the big clusters. Break granola into pieces with your hands. Store in an airtight container.
