Citrus Ginger Mocktail

Groceries:

  • 3-4 Tbsp fresh ginger juice (3 1-inch knobs of ginger, blended with ⅓ cup water, and strained)
  • 4 cups citrus juice (prefer freshly squeezed, but you can do a mix of fresh and bottled as well. I did a mix of fresh orange, lemon, and grapefruit)
  • 4 ½ cups sparkling water (or ginger beer for a stronger ginger flavor)
  • One batch rosemary simple syrup
  • Edible glitter (Optional)

For the simple syrup:

  • 1 cup water
  • 1 ½ cup dark brown sugar
  • The zest of 1-2 citrus fruits: I did an orange and a lemon
  • 1-2 sprigs of fresh rosemary
  • ¼ tsp sea salt
  • Very small pinch ground cardamom

Instructions: 

Bring the simple syrup ingredients to a light boil in a small saucepan until sugar and salt have been dissolved. Let stand for 15 minutes. Strain. In a pitcher, add the ginger juice, fresh citrus juice, and strained simple syrup. Add sparkling water and edible glitter and serve over lots of ice.
