Grilled Honey Lime Chicken & Fresh Peach Salsa

Honey Lime Chicken:
- 1lb chicken breasts
- Juice & zest of one lime
- 3 tbsp honey
- 2 tbsp avocado oil
- Spices: 1/2 tsp cumin, 1/2 tsp smoked paprika, 1 tsp chili powder, 3/4 tsp salt, 1/4 tsp black pepper
- 2 cloves garlic, grated
- 2 tbsp fresh cilantro, chopped
Peach Salsa:
- 3-4 large ripe but firm peaches, pitted & diced
- 1/2 cup cilantro, chopped
- 1/2 red onion, diced very fine
- Zest of 1 lime
- Juice of 2 limes
- Pinch of salt
- Optional: 1 jalapeno (seeds removed, diced)
Instructions:
- Marinate the chicken: in a large bowl whisk together the lime zest, lime juice, honey, avocado oil, cumin, smoked paprika, garlic, cilantro, salt & pepper. Add the chicken and toss to coat. Cover and refrigerate for 30 minutes to 2 hours.
- Assemble the salsa: in a medium bowl combine the peaches, cilantro, red onion, and jalapeño (if using), juice of a lime and salt. Gently toss until well combined.
- Grill: preheat the grill to medium-high heat. Place the chicken over direct heat and grill for 4-6 minutes on each side. Pull the chicken off once it reaches an internal temp of 160° and let it sit for 10 minutes before cutting (it will raise to 165° off the grill).
- Serve: with rice, sliced chicken, and top with the peach salsa. Garnish with extra cilantro and a squeeze of fresh lime, if desired. Enjoy!
