Grilled Honey Lime Chicken & Fresh Peach Salsa

Honey Lime Chicken:

  • 1lb chicken breasts
  • Juice & zest of one lime
  • 3 tbsp honey
  • 2 tbsp avocado oil
  • Spices: 1/2 tsp cumin, 1/2 tsp smoked paprika, 1 tsp chili powder, 3/4 tsp salt, 1/4 tsp black pepper  
  • 2 cloves garlic, grated  
  • 2 tbsp fresh cilantro, chopped  

Peach Salsa:

  • 3-4 large ripe but firm peaches, pitted & diced
  • 1/2 cup cilantro, chopped
  • 1/2 red onion, diced very fine
  • Zest of 1 lime
  • Juice of 2 limes
  • Pinch of salt  
  • Optional: 1 jalapeno (seeds removed, diced)

Instructions:

  1. Marinate the chicken: in a large bowl whisk together the lime zest, lime juice, honey, avocado oil, cumin, smoked paprika, garlic, cilantro, salt & pepper. Add the chicken and toss to coat. Cover and refrigerate for 30 minutes to 2 hours.
  2. Assemble the salsa: in a medium bowl combine the peaches, cilantro, red onion, and jalapeño (if using), juice of a lime and salt. Gently toss until well combined.
  3. Grill: preheat the grill to medium-high heat. Place the chicken over direct heat and grill for 4-6 minutes on each side. Pull the chicken off once it reaches an internal temp of 160° and let it sit for 10 minutes before cutting (it will raise to 165° off the grill).
  4. Serve: with rice, sliced chicken, and top with the peach salsa. Garnish with extra cilantro and a squeeze of fresh lime, if desired. Enjoy!
