Honey Marshmallow Fluff

Groceries:
- 1 Tbsp gelatin
- 1 cup cold water, divided
- 1 cup honey
- 1/4 cup sugar
- 1 tsp vanilla bean paste
- ¼ tsp salt
Instructions:
In a stand mixer bowl, add ¼ cup cold water. Gently sprinkle the gelatin in an even layer across the surface of the water. Set aside and a let bloom for 5 minutes while you prepare your sugar syrup.
In a medium saucepan, combine ¾ cup water, sugar, and honey. Bring to a boil and let come up to 240 degrees Fahrenheit (soft ball stage). Do not let the sugar mixture go over 240 degrees.
With the whisk attachment on the stand mixer, start mixing on low and pour the hot sugar syrup over the gelatin mixture. Let mix for 5-10 minutes on a medium high speed until lovely velvety peaks form. Place in an airtight container and store in the fridge for up to two weeks.
