Peach, Cherry, and Burrata Crostini

Serves 4-6 as an appetizer
Basil Olive Oil:
- 1 cup basil
- 1/2 cup extra virgin olive oil
- Pinch of salt
Crostini:
- 1/2 of baguette, sliced thinly
- Extra virgin olive oil for drizzling
- Pinch of flaky salt
Peach, Cherries, and Burrata:
- 2 peaches, sliced
- 3/4 cup cherries, pitted & halved
- 2-3 pieces of burrata (4oz each)
- Blanch the basil: put the basil in a pot of boiling water for 20 seconds. Move to a bowl of ice cold water and squeeze out the excess liquid.
- Make the Basil Olive Oil: blend the basil, olive oil, and a pinch of salt until smooth. Strain through either a mesh sieve or coffee filter, set aside.
- Toast the crostini: preheat your oven to 400ºF. Line a baking sheet with parchment paper, arrange your baguette slices. Drizzle with olive oil and a pinch of flakey salt. Bake for 10 minutes or until golden.
- Assemble: to a serving platter, add the burrata, peaches, cherries, and crostini. Spoon the basil oil over the burrata and fruit, finish with a pinch of flaky salt and extra basil. Dig in & enjoy
